3.7 Yaki udon
I shall prepare 21 delights of Japan and publish them in 7 consecutive episodes. Episodes 1&2 were already published and now is episode 3.
Yaki udon (焼きうどん, "fried udon") is a Japanese stir-fried dish consisting of thick, smooth, white udon noodles mixed with a soy-based sauce, meat (usually pork), and vegetables. Yaki udon is relatively simple to make and popular as a staple of Japan's izakaya, or pubs, eaten as a late-night snack. The dish originated in Kokura, in southern Japan, after the Pacific War. The widely accepted story of how the dish was created dates back to just after World War II, when food was scarce. The owner of the noodle restaurant Darumado used udon noodles in popular yakisoba preparations, because the proper noodles were not available.

2½ Tablespoons dark soy sauce
2 Tablespoons oyster sauce
1 Tablespoon mirin
2 teaspoons brown sugar
½ teaspoon rice wine vinegar

2 Tablespoons oyster sauce
1 Tablespoon mirin
2 teaspoons brown sugar
½ teaspoon rice wine vinegar
½ tsp Corn starch
Stir-fried Ingredients
Sanuki udon, cabbage, shiitake mushroom, carrots, red onion, green onion, corn oil
This plate of beef yaki udon features thick savory udon noodles stir-fried with beef and vegetables.
Beef and onion are simmered in a mildly sweet sauce flavored with dashi (fish and seaweed stock), soy sauce and mirin (sweet rice wine).
The garnished vegetables are blanched for 2 minutes.

Sanuki udon, beef thinly sliced, onion
Sweet sauce
Japanese soy sauce, mirin, dashi, brown sugar
Garnish
Broccoli, cabbage, red cabbage, carrots, red onion
Method
First stir fry udon and stir-fried ingredients with Yaki Udon Noodle Sauce . Place this stir fried udon in a big bowl. Add beef and garnish.
Salmon is marinated in soy sauce, mirin, garlic, sugar, and ginger and then grill in a grill pan until the skin develops some candied and dark hues. The marinade is then reduced down to a rich sauce and glaze.
The garnished vegetables are blanched for 2 minutes.

Garnish
Cabbage, red cabbage, carrots
Method
First stir fry udon and stir-fried ingredients with Yaki Udon Noodle Sauce. Place this stir fried udon in a big bowl. Add salmon and garnish.
Chicken is marinated in soy sauce, mirin, garlic, sugar, and ginger and then roasted in an oven at 350F until the skin develops a candied, crackled, dark hue. The marinade is then reduced down to a rich sauce and glaze.
The garnished vegetables are blanched for 2 minutes.

Garnish
Broccoli, cabbage, red cabbage, carrots
Method
First stir fry udon and stir-fried ingredients with Yaki Udon Noodle Sauce. Place this stir fried udon in a big bowl. Add chicken and garnish.
