Dee, who is one of the BC Housing coordinators at Burnaby Neighbourhood House, invited me Chef Kar to prepare the Christmas Lunch at Hall Towers 1&2 in Edmonds on Friday, December 19, 2025.
Burnaby Neighbourhood House runs community programs for low income seniors in their living complex around Edmonds area. Located at 7272 and 7264 Kingsway in Edmonds Town Centre, Hall Towers has approximately 331 apartment units in two towers. The 16 story and 18 story hi rise towers were direct managed facilities overseen by BC Housing.
BC Housing is a provincial Crown agency responsible for subsidized housing options across the province.
Total Guests Attended: 66 senior residents from Hall Towers 1&2
Volunteer helpers: 7 including Stacey, Aaron, Livia, Sylvia, Alina, Sara and Choah.
Dee coordinated and helped me to get all ingredients and cookware ready.
Stacey, Aaron, and Sara helped me to prep. Stacey and Dee washed dishes. Sara, Livia, Sylvia, Alina and Choah helped to plate and serve, and cleaned up.

Turkeys were poultry originated from North America. According to traditions, Americans will prepare turkeys during thanksgiving and Christmas. Traditionally, turkeys are brined and marinated with rosemary, thyme, sage, oregano and other herbs, put in the oven to roast. When enjoying roasted turkeys, the most important is paired with Cranberry Sauce. Due to season, fresh cranberries are available in supermarkets during Christmas.
Ingredients: Turkey, olive oil, salt, black pepper, fresh rosemary, thyme, sage, oregano, onions, garlic, lemon, carrots, turkey soup stock, water
Brine: thawed turkey, salt, water

Turkey Soup Stock:
Turkey giblets(livers, hearts, gizzards, necks), onions, carrots, celery stalks, bay leaves, salt and pepper, water
Marinade: brined turkey, rosemary, thyme, sage, oregano, onions, garlic, lemon, olive oil, salt, black pepper,
Cranberry Gravy: roasted turkey juice, turkey soup stock, cranberries, sage leaves, sugar, salt, black pepper, corn starch, water
Side dishes: whole potatoes, Stuffing bread cubes
Garnish: Brussel sprouts, Baby carrots

Mashed potatoes:
Ingredients: whole potatoes skin removed, unsalted butter, sour cream + parsley + sugar + salt + pepper
Stuffing Bread Cubes:
Croutons or bread cubes, roasted turkey juice, salt and pepper
Potatoes:
Boil whole potatoes until soft and tender but not mashy. Remove skin of cooked potatoes and mash.
Sour Cream sauce: Sour cream + parsley + sugar + salt + pepper
Butter: Serve at room temperature
Brussel sprouts and Baby carrots:
Blanch sprouts and Baby carrots until soft and tender
Italian Salad
Spring Mix (Baby Lettuces, Baby Greens, Chicories) + Roma Tomatoes
